Easy Keto Funnel Cake


 

I N G R E D I E N T S

  • 2 large eggs
  • ¼ cup unsalted butter melted
  • ½ teaspoon baking powder
  • 1 scoop 23.3g whey protein isolate
  • 1 tablespoon coconut flour
  • ½ teaspoon vanilla extract
  • ½ teaspoon xanthan gum
  • Pinch of salt
  • 2 cups coconut oil for frying
  • Powdered erythritol for serving
    D I R E C T I O N S
    1. Heat the oil in a large cast-iron skillet over medium heat until it reaches 350° F.
    2. In a medium bowl whisk together all of the ingredients until smooth. Transfer to a piping bag fitted with a large ½” tip.
    3. Slowly add the batter to the oil in a circular pattern. Fry until golden, about 3 minutes per side.
    4. Remove and place on a paper towel-lined plate to drain excess oil. Sprinkle with powdered erythritol and serve.
